Since previous inspection, there is a new hot holding unit and refrigerators have been serviced. Discussed employee health. PIC to review employee health guidelines at February meeting.

Observations discussed with PIC. Monitor reach-in refrigerator temperature. If frig is not maintaining foods at 41 degrees or below, call to have it serviced and move foods to the other reach-in/walk-in. Hot holding unit was not keeping meatballs hot enough, despite being turned all the way up. Meatballs were reheated in the oven to bring the temp back up. Recommend replacing the equipment if it fails to hold foods at the proper temperature. Permit issued.

    Observation: Hood trough is dusty. Vent cover to vent above dishmachine is dirty. Floor corners in dishroom are dirty. Floor in washing machine room is dirty.
    Correction: Clean.
