    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Spicy chicken wrap in serve line 5 (salad bar) cold holding, at 50F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. CORRECTIVE ACTION: moved to freezer for rapid cooling.

    Correction: A handwashing sink shall be equipped to provide water at a temperature of at least 100°F through a mixing valve or combination faucet.

    Observation: There is no covered refuse container for the disposal of feminine napkins in either of the ladies reestrooms.
    Correction: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.

  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: chicken in pkg.salad in Traulsen 2DR Upright Cooler, at 45F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. Corrective action: food out of temperature was rotated to larger cooling units.

This visit was conducted to do an opening inspection after renovation/remodel.
The kitchen, storage room and serving liens have been inspected and is hereby approved for opening by Fairfax County Health Department.
Ceiling tiles in bathrooms for kitchen staff are being replaced with washable, non perforated type .
