Observation: Employees observed working in the food service area without proper hair restraints.
Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

Facilities in good shape. concessions just getting under way. Good reheating of chili. Chili labeled 5/1/14, good job. Per Mr. Huff chili is cooled in small quantities then combined in large container, OK.

Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: Bottom of Coldspot refr.
Correction: Clean and sanitize these surfaces for food contact.

Observed good handwashing, especially from employees returning from breaks. Employees began cleaning coolers before it was mentioned what was needing cleaning. This along with the open drink containers was being corrected by the person in charge and employees before it was mentioned. Discussed cooling of chilli at the restaurant it is prepared at. Methods mentioned were good, discussed issue with ice paddles cracking all the time.

Observation: Observed open drink containers in kitchen.
Correction: Remember if drink containers are to be kept by employees in the kitchen, they need to be with a lid and straw. Staff removed drinks from kitchen before this was explained to the person in charge.

Observation: Employee observed cutting onions without prevention of barehand contact. Hands had just been washed.
Correction: Remember we want to prevent barehand contact with foods that will recieve no heat treatment after handling. Single use gloves, deli paper, tongs, and other utensils can be used.

Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-contact surfaces: Popper/popcorn kettle, table in front of deep fryers, and tops of coolers and other coolers.
Correction: Maintain nonfood-contact surfaces of equipment clean.

Observed the infield concessions setting up and preparing food. Discussed cleaning, sanitizing, handwashing, and glove use. Good knowledge and procedures with using the microwave for reheating.

Observation: Handle on GE refrigerator in the infield concession stand is in poor repair and could cause injury.
Correction: Replace the handle on the refrigerator.
- Critical: Water Capacity* (corrected on site)
Observation: The water heater / boiler serving the food service establishment is not operating.
Correction: Water boiled for dishwashing and heated for handwashing. Hot water must be provided before the next race.
