    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Sanitizing Solutions, Testing Devices (repeated violation)
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The electric hand dryer in the men's restroom does not work.
    Correction: Discussed with manager, and he is going to replace the hand dryer. In the meantime, place paper towels in the men's restroom until the hand dryer is replaced.

    Observation: The person in charge could not provide a food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so you can properly monitor the temperature of food items in the establishment.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.

Permit to operate issued today, 1-14-15.
Not all of the refrigeration equipment was plugged in today. Double check each unit to be sure each is set to hold at or below 41 degrees F.
Food is purchased through Sysco and U.S. Food.
Dishwasher is single rack, and sanitizes with chlorine. Temperature of unit must be able to reach 120 degrees, as is specified on the data plate. The water was only reaching 110, but the water was turned up to meet this during my inspection.
You must have at least one (suggest keeping 2 or 3) small diameter metal stem food probe thermometers.
