Observation: The walk-in freezer was observed in a state of disrepair, the door gasket is damaged/missing and heat strips may not be working properly causing build-up of ice near the door on floor.
Correction: Repair the Walk-in freezer door to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: Plumbing connection under the drink machine at the drive-thru is leaking. This is creating an unsanitary and unsafe conditions.
Correction: Plumbing systems and components shall be maintained in good repair.

Observation: Less than 20 foot candles of light was noted in the walk-in refr. The light is out, no light.
Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms

Great handwashing and prevention of barehand contact observed. Until the make table has been repaired or replaced, rotate food in the unit as needed. If an item can not be kept cold with ice such as the cheese, keep what can be used in six hours as long as it does not reach 70°F and when six hours are up discard what is left, or rotate the item from the walk-in every two hours. Call the Health Department to discuss options for the condensate drains once you have had the floor drain looked at by a plumber.

Observation: The walk-in freezer has a build up of ice at the door, on the floor, and on the ceiling. The gasket is missing on the bottom of the door and the heat strips on the door frame are not working.
Correction: Repair the heat strips and apply a new gasket on the door where it is missing. If these do not prevent the build up of ice, then more work may be needed on the unit.

Observation: The make table cooler is not working. Using ice to try to keep the items cold that are needed in the make table cooler.
Correction: Have the make table cooler repaired or replaced so that it can maintain food at 41°F or lower.

Observation: The condensate lines for the drink dispenser is emptying into a bucket instead of a floor drain. The floor drain next to the unit does not function.
Correction: Have the floor drain fixed so that it can be used for the condensate lines.
