Discussed with the Person-in Charge:
1. PIC could not walk with the EHS during the entire inspection.
2. The facility has work orders in to repair a hot holding box and RIC.

  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The following ready-to-eat (RTE) commercially processed foods were not labeled for disposition in the WIC: diced ham, diced turkey, and shredded cheese. PIC labeled all the foods.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) in the back behind the 3 compartment sink are heavily scratched and scored.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Observed the vents in the back of the establishment not maintained in a clean condition.
    Correction: Clean intake and exhaust air ducts and change filters so they are not a source of contamination by dust, dirt and other materials

Observed water from new ice machine to be dripping onto the floor below. New ice machine drain is not properly lined up to drip into the floor drain in this area. Person in Charge stated she will submit a work order to have the ice machine drain re-aligned.

Discussed the milk cooler with the person in charge. Observed several work orders which the PIC has placed over the course of this school year, beginning in September. Also observed work order to replace the door gaskets on the unit. During inspection, milk cooler was holding an ambient air temperature of 56'F. The milk cooler was also observed to have a significant amount of condensation, both inside and outside the unit. PIC will contact the health department once work orders are filled for the milk box.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Milk (54'F it) cold holding at improper temperatures. Milk cooler was swapped out with an extra cooler and milk was re-located.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

Overall, facility clean and well maintained. Excellent food handling and hand washing practices observed during inspection.
Contact the health department regarding repairs to be made to the sanitizer dispensing system and the milk box.
The chemical dispenser has been noted on previous reports as having the same or similar issued. Ensure staff is testing chemical concentration daily, and adjust as needed to ensure proper concentration. Add chemical manually if needed.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Milk (44'F) cold holding at improper temperatures in the milk box in the middle of the kitchen. Milk was re-located to the walk in cooler and a work order was submitted for the cooler by the field manager.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of the equipment being washed in the three compart sink were not being sanitized due to lack of sanitizer being dispensed into the sink via the automatic feeder. The bottle of sanitizer was swapped out, and the feeder tube was adjusted, which improved sanitizer feed to approximately 200-300 parts per million. A work order to the chemical supply and maintenance company was also submitted by the PIC and the field manager of the school cafeteria.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
04/15/2014Routine
Discussed with the Person in Charge:
1. Dish machine electrical component which feeds detergent into the machine is not working at this time. PIC has placed work orders to have this fixed. The final rinse water temperature was sufficient to sanitize equipment, however operator is running all equipment through the three compartment sink to wash, rinse and sanitize until the dish machine can be repaired.
2. Quat sanitizer in the three compartment sink is measuring at 200 parts per million.
3. During today's inspection, freezer was observed to be extremely full. Boxes were observed to be stacked very high, and carts were being utilized for additional storage area off of the floor. All reach in freezers were also noted to be full. Ensure adequate freezer space is provided.

Discussed the following items with the Person in Charge:
1. Recommend re-painting a small section of the wall behind the dish machine. It appears as though the paint is beginning to peel in this area from the exposure to steam in this area.
2. Observed excellent hand washing and glove use practices during today's inspection.
3. In general, facility observed clean and well maintained. Thank you!
