  • Indoor Areas - Surface Characteristics (repeated violation)
    Observation: The indoor ceiling material does not meet the standard of: 1. smooth, durable and easily cleanable 2. nonabsorbent. Some of the ceiling tiles have been replaced, but not all of the tiles.
    Correction: Refinish or replace the indoor ceiling at the area designated so it is: 1. smooth, durable and easily cleanable 2. nonabsorbent

  • Critical: Hands and Arms Cleaning Procedure* (corrected on site)
    Observation: Dish room employee handled dirty dishes, sprayed off hands and proceeded to work with clean and sanitized dishes.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Egg salad and sour cream packets cold holding at 45*.
    Correction: Cold hold potentially hazardous/time-temperature control for safety foods at or below 41*. Per manager, contents were observed 38* this morning. Advised to ice contents down and technician on premises to evaluate unit.
  • Cooling, Heating, and Holding Capacities
    Observation: Walk-in cooler was not holding a temperature of 41F of below.
    Correction: Maintain food items at 41F or below. Improper food storage temperatures are a major contributing factor to foodborne illness. Staff have been and out of unit throughout the morning which can affect temperature of food and ambient air. Additional refrigeration may be needed to prevent the increase in temperature from the doors constantly being opened and closed. Suggesting removing limited quantity from walk-in to eliminate the need to keeping going into the unit.

I reminded the cafeteria manager that in the event of the school losing power for more than one hour, the Hampton Health Department needs to be notified.     Observation: Tuna salad dated 4-30-12 had an internal temperature of 44F. Manager explained to me that no PHF is suppose to be held in the U/R Main line refrigerator. Manager voluntarily discarded item.
    Correction: All Potentially Hazardous food in cold holding should be held at 41F or below.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The following is in poor repair:
    >> The chest freezer interior lid and ledge are cracked.
    >> The Store room Up Right freezer interior door is cracked.
    >> The hood above the dish machine is rusted.
