    Observation: Observed employee take off glasses while wearing single service gloves then proceeded to handle mozz sticks on the line with the same gloves.
    Correction: Protect food from contamination. Make sure you change your gloves once the gloves come in contact with items that are not cleaned and sanitized.

No violations noted. The quaternary sanitizer dispenser is not working at the 3 vat sink. All food utensils are cleaned in the dish machine. The dish machine was sanitizing with hot water. Staff was observed recording food temperatures after the food was removed from the ovens.

All food temperatures were within the acceptable range. Employee practices were good. The dish machine was sanitizing with hot water with a utensil temperature of 173 degrees F.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly stored between use as the sanitizer concentration was to low.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use. The sanitizer coming from the dispenser was not at the correct concentration as it was to low. The chemical dispenser needs to be recalibrated.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) tomato paste in the refrigerator, the food should have been discarded 3 days ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Item was discarded.
  • Refuse - Covering Receptacles
    Observation: Dumpster container for refuse did not have a lid or cover.
    Correction: Cover all waste containers when not in continuous use. Call trash company and have the Dumpster replaced with one that has a lid.

The above item was corrected. The single service items in cafeteria are handled by volunteers who help with the chicken in dinning area. The dish machine was sanitizing with hot water with a utensil temperature of 167 degrees F. Kitchen staff was observed changing gloves between tasks. All food temperatures were within the acceptable range. Note: There were a number of dead sting bugs noted by the dish machine area.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (corrected on site)
    Observation: Single service knives observed unprotected from contamination at the condiment station.
    Correction: Store single service items inverted in an approved dispenser so hands do not come in contact with the blade to prevent contamination.
