- Bottom interior surfaces of reach in freezers (2) in the Dairy Kitchen
- Door Gasket of the Traulsen reach in freezer in the Dairy Kitchen.
- Can opener and bracket.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
- Floors, Walls, and Ceilings - Cleanability (repeated violation)
Observation: Ceiling in the Dairy and Meat Kitchens are not smooth and easily cleanable.
Correction: Repair or replace ceiling to make it smooth and easily cleanable.

Observation: Food and beverages stored on the floor in the walk in refrigerator and in dry storage area outside the walk in refrigerator. .
Correction: Elevate food storage onto approved shelving with minimum 6" legs or casters.

- Side exterior surfaces of Blodgett ovens.
- Shelf above the stove in the dairy kitchen.
- Top exterior surfaces of storage cabinet in the dairy kitchen.
- Utensil shelf (top) in dairy kitchen.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
- Floors, Walls, and Ceilings - Cleanability
Observation: Ceiling in the Meat and Dairy kitchens are not smooth and easily cleanable.
Correction: Repair or replace ceiling tiles to ensure the ceiling surface is smooth and easily cleanable.
- Physical Facilities in Good Repair
Observation: Far wall in the dairy kitchen is not maintained in good repair
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Floor behind the Blodgett oven in the meat kitchen has an accumulation of grime and debris.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
