    Observation: Observed sliced tomatoes on the prep line and tuna salad in the walk-in at 48°F. Walk-in was 50°F.
    Correction: Corrected by removing a box that was blocking the air flow on the compressor of the walk-in cooler. Walk-in cooler temperature was at 40 and still dropping after the box was removed.

    Observation: No hand washing signs posted at the prep line and kitchen hand sinks.
    Correction: Hand washing signs given to management.

    Observation: Observed tomato sauce inadequately reheated (118F) before placing in the steam well.
    Correction: Reheat to 165F before placing in hot wells to hold at 135F.

    Observation: Observed tomatoes at the sandwich line cold wells above 41F: 53F (left), 46F (far right).
    Correction: Manager states that she will switch to 6 hour time control.
