    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: PIZZA SAUCE 55F& COOKED CHICKEN 54F @ #3 - COOKED CHICKEN 48F, TOFU 54F& WHITE BEANS 47F @ #7- CREAM CHEESE 45F, YOGURT 45F & YOGURT PARFEIT 43F @ #14
    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. DISCARDED PHF & MOVED RECENTLY PUT IN ITEMS THAT ARE COOLING TO OTHER WORKING UNITS.CFM CONTACTED REPAIR SERVICE.

    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. This Guaqamoli product was discarded, and mgr. will put less product in this tub type holder and monitor temperatures in cooler top unit products before keeping foods for next day service. The TOFU will be discarded when this self service bar is closed, and the same recomendations as before are warranted. ORAL & WRIITEN INFO. PROVIDED.

    Observation: The following cooked potentially hazardous foods are not being adequately cooled from 135°F to 70°F within 2 hours chicken breast and dice chicken cooling for 2.5 to 3 hours in the Walk-in cooler(2) observed at 79,102°F.
    Correction: Potentially hazardous foods shall be cooled from 135°F to 70°F within 2 hours to prevent the growth of harmful bacteria.--Discarded
