  • Plumbing System Maintained in Good Repair
    Observation: Faucet on the hand sink in the dish area observed leaking. Valves turned off, temporarily make the sink unusable.
    Correction: Repair the sink faucet. The sink must be maintained for the dish washer to have easy access to hand washing.

-Other equipment had been removed from service temporarily for repairs by management. The Traulsen unit found today will be serviced at the same time as the other units already identified with functioning issues.
-Please have line cooks check final cooking temperatures for potential hazardous foods periodically to verify the processes used to ensure safe cooking temperatures are reached.

  • Equipment - Good Repair and Proper Adjustment
    Observation: Small Traulsen under counter refrigerator was observed in a state of disrepair. It was not cold holding food properly.
    Correction: Repair the refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
  • Physical Facilities - Cleaning Frequency and Restrictions (corrected on site) (repeated violation)
    Observation: The floor in the walk-in noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
