Observation: Food employees are not informed of their responsibility to report to their PIC information concerning their health and activities as they relate to diseases transmitted through food.
Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food. EHS provided PIC with signage regarding employee health responsibilities and PIC immediately posted at the hand sink.
- Food Display
Observation: The food on display is not protected from contamination--Open containers of raisins and walnuts and tray of apples on the continental breakfast bar.
Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination. Suggested storing the nuts and raisins in covered shakers and to post a placard recommending apples are washed additionally prior to consumption.
- Cooling Methods (corrected on site)
Observation: The methods used for cooling folded eggs were not adequate--hot eggs stored in lexan on top of oven covered in aluminum foil.
Correction: Discussed proper cooling methods and to relocate the eggs from the oven. Advised to discontinue stacking them high and to store them uncovered during the cooling process. Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

Facility anticipates major remodel/upgrade to breakfast area. Plans must be submitted to this office for review, comment and approval prior to any work starting. In discussion with breakfast staff, hard boiled eggs out at buffet, butter chips, egg rounds/omelets and sausage patties at 10:00. When breakfast taken down are taken to housekeeping/employee break room for them to eat. Note: they need to eat product promptly - cannot have rake home bag and leave unconsumed for hours Note: Encouraged to breakfast staffer to store milk, yogurt, hard boiled eggs, omelets in left under counter refrigerator
