Don't cover tomatoes completely after they are diced, so that they can cool to 41 degrees quickly. Left faucet of the 3 compartment sink in the main kitchen has a leak.

    Observation: Observed several milks in both cafeterias with expiration dates between Feb 26-March 8.
    Correction: PIC discarded all expired milk.

Towel dispenser in south commons doesn't work (needs to be repaired). Make sure someone follows up on making sure the dishes are cleaned thoroughly.

    Observation: Observed the ice machine in the north commons has mold build-up on the inside.
    Correction: Empty out and clean/sanitize the ice machine.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: When timed, the automatic shut off faucet at the handwashing sink located on the line in the South Commons did not provide a flow of water for at least 15 seconds without the need to reactivate the faucet.
    Correction: Adjust or replace the faucet to provide water tempered to at least 100°F and for at least 15 seconds to allow more effective handwashing and removal of fatty soils encountered in kitchens.
  • Plumbing System Maintained in Good Repair
    Observation: Spray nozzle at the prep sink in north commons has a leak.
    Correction: Have leak repaired.
  • Light Bulbs Protective Shielding
    Observation: Observed light shields broken and missing in the dry storage (South Commons). Also the light fixture in the walk-in freezer is falling off the ceiling.
    Correction: Replace light shields and have the light shield in the walk-in cooler fixed.
  • Lighting, Intensity
    Observation: Observed the light out in the walk-in cooler (south commons)
    Correction: Replace light bulb.
  • Physical Facilities in Good Repair
    Observation: Observed a few missing tiles in the South Commons.
    Correction: Replace ceiling tiles.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Observed the floors in need of cleaning in both cafeterias (in the north commons make sure to clean behind the rolling freezers.
    Correction: Clean the floors regularly.

    Observation: Observed employee use phone and then return to work without washing hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Observed in need of cleaning: floor in dish room in Main Kitchen, floor around ice machine in South Kitchen (pipe leaking?) and North Kitchen, wall dusty above freezers in North Kitchen.
    Correction: Clean facilities regularly and thoroughly.
