    Observation: Observed pink mold on the interior metal baffle of the bulk ice machine.
    Correction: Clean the baffle/protect ice when doing so.

    Observation: Observed a missing light shield at dishmachine station.
    Correction: Install a shield or end caps for existing light tubes.

Dishmachine is rinsing higher than 194. Have checked. Meatloaf on counter at 121-133.6 F. Your time to cool starts now. Meatloaf were placed in walk in with parchment paper loosely on top. Follow proper temperature guidelines for quick cooling. Manager to review with staff. Sealegs and beef being thawed in standing water. Thaw in refrigerator or under cold running water.

    Observation: Oatmeal found covered inside walk in at 65 F. This was pulled from breakfast line around 8 AM.
    Correction: Cool from 135 F to 70 F within 2 hours and then to 41 F in 4 more hours. PIC discarded.

Other observations: BBQ thawing on counter. Plan and thaw inside walk-in. BBQ was returned to walk-in. Defrost ice cream freezer. 162 degrees wash/180 degrees rinse.

    Observation: Breaded chicken patties found on steam table at 117 degrees.
    Correction: These were returned to steamer and reheated to 165 degrees.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: Inconsistent date marking observed. Some had eight days, some seven.
    Correction: Instruct workers on proper marking. Remember day you prepare or open a food is day one. Dates were corrected.
