A clean, professionally- run facility. No deficiencies noted.
The dish machine was evaluated and it was found that it takes a few runs of the machine to get the water lines heated enough that the hot water will reach 120F min wash temp as listed on the data plate. Unit also was carrying large air bubbles in the chlorine supply line.
Reminder to manager to keep chlorine in sani-bucket at 50-100 ppm.

    Observation: The commercial can opener was observed to have accumulations of dried food residues on the cutting blade and mounting block..
    Correction: Clean and sanitize these surfaces for food contact.

  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site) (repeated violation)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F.

    Observation: Employees are not aware of or are not monitoring the cook temperatures of potentially hazardous food.
    Correction: Ensure that employees are properly cooking potentially hazardous food to the minimum required temperature for the specified amount of time in accordance with the Regulation. Be particularly careful in cooking those foods known to cause severe foodborne illness and death, through daily oversight of the employees' routine monitoring of the cooking temperatures.
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: Due to improper operation of the mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1680)
    Correction: Repair the unit so that achieving a utensil surface temperature of 160°F can be measured by an irreversible registering temperature indicator (e.g. thermolabel and maximum registering thermometer). Discontinue use of mechanical warewashing machine and convert to use of 3-vat sink wash, rinse and chemical sanitization. Use single-service items as deemed necessary if not capable of effective manual washing, rinsing, and sanitization of food-contact surfaces.
