A clean, controlled, professionally operated institutional kitchen. Management is knowledgeable, responsive, personable, and professional. Staff are well trained, and display correct working knowledge of handwashing, food safety, and sanitation. Proper hand restraints, knowledge of employee health, clean aprons, and proper glove use were observed. Facilities are organized, spacious, with good lighting, and are free of background soil.
No deficiencies noted.

Facility is spacious, with good lighting and ventilation. Temperature control was good throughout.
Minor background soil is present in some areas of the dish washing area---upper backsplashes, some small crevices near the loading and unloading areas of the dish machine, and the handle of the spray nozzle.
Reminder to primary manager: if facility is operating, someone must be present with ServSafe Mgr level of food safety training (or equivalent). Staff need to be cognizant of the risks associated with eating while working in a commercial kitchen, especially a facility which feeds a highly-susceptible population. The manager at any given time must have a working knowledge of employee health policies including reportable illnesses, and must be well versed in temperature control of food, and sanitizer use. At inspector arrival, there were no sani-buckets made up, yet staff were preparing food and trays. If facility is operating, sanitizers should be out and ready to use.

  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: Two of the three staff, one of them the manager, were eating food in the food prep and tray staging areas of the kitchen. One staff member was wearing food service gloves while placing food in her mouth.
    Correction: Provide a designated area where employees may eat so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection. Staff removed personal foods from kitchen, ungloved, and washed their hands before returning to work.

A clean, organized, and efficiently operated commercial kitchen. Management and staff are very knowledgeable about food safety, and control measures are strictly enforced.
It is noted that the facility is putting all of their food waste down the drain through the garbage disposal. Notified Galax City Engineer. As long as the nursing home maintains their exterior grease trap, the organic load is not a problem for the Galax WWTP. Practice may continue.

Facility is well run, with knowledgeable and responsive manager and staff. Proper handwashing was evident, as was proper use of gloves, and all staff had hair restraints and clean aprons. Employees were witnessed adhering to handwashing policies by going directly to a handsink each time they returned to the kitchen from another area--this even occurred when staff were not aware of inspector's presence.
Steam table was consistently very hot, with the one failure due to meat being piled too high in the pan. Cooking unit (steam cooker) heats food very rapidly.
Facilities are clean, well-stocked, and orderly. Employees are well-trained, with good managerial control.

  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Beef burger patties hot holding at improper temperatures. Patties were in a stack in a steam table tray, with the top burger at 114F. The meats farther down in the tray were at 168F.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. Patties were placed in steam cooker and reheated to 194F (temp checked by VDH and employee).
