Borderline temps when use is not heavy indicate likely failure to maintain temperature during heavy traffic. Verify cold-holding by checking temperature of foods in the storage unit. Ensure that cooks know proper cook temperatures for all products.

Observation: The food-contact surface of the can opener has accumulations of food residues. The non-food contact surface of the can opener, along the back and sides, has old food and grease accumulations. The bracket for mounting the tomato slicer, attached to a food-prep surface, has accumulations of organic soil around base.
Correction: Clean and sanitize these surfaces for food contact.Eliminate residues.

Inspection was conducted in part as a routine inspection, and in part to follow-up on a site visit (December 2014) to discuss a complaint. Restaurant was found to be clean, brightly lit, and well managed, with very knowledgeable staff who are well-versed in proper procedures. Facilities are neatly organized, relatively spacious for a fast food operation, and offer abundant refrigerated storage. Handwashing was witnessed to be frequent and thorough, and company policy precludes use of excessive jewelry, use of cell phones, or use of tobacco. The complaint issue had been addressed and stands as corrected.

Observation: Grilled chicken breast and cooked sausage patties were hot holding at improper temperatures.
Correction: Foods were voluntarily disposed at inspection, and new batches were prepared. Hot holding unit temperature was corrected.

Observation: Cheddar cheese slices were being held at room temperature after the ice in the cooling bin had melted.
Correction: Ice bin was refilled at inspection.
