Observation: An open can of Coke on the prep table is stored in a manner that may contaminate food, food contact surfaces or utensils.
Correction: Maintain beverage containers for staff in a manner to prevent contamination of: the employee's hands
- Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
Observation: Raw eggs are stored in a manner that may cause cross contamination of to ready-to-eat food (RTE).
Correction: Store raw animal foods in a manner to prevent potential contamination of RTE foods. The Person in Charge moved the eggs to the bottom of the refrigerated unit.
- Critical: Cooling* (corrected on site)
Observation: Ground beef for empanadas was cooked 5 1/2 hours ago but is not being adequately cooled to prevent the growth of harmful bacteria. It is 61°F and in a refrigerator with an ambient temperature of 48°F.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. The operator placed the container in ice water to cool it quickly.

Observation: Shredded cheese (in the refrigerator near the front) is at an improper cold holding temperature of 61°F.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. The cheese was transferred to a freezer for quick chilling.

Observation: The cutting board is discolored and visibly soiled.
Correction: Clean and sanitize these surfaces for food contact. If the cutting board can't be cleaned it will require resurfacing or replacement.
- Handwashing - Using a Handwashing Lavatory (corrected on site)
Observation: The handwashing sink was blocked by a box of money.
Correction: Provide easy access to the handwashing sinks at all times. The Person in Charge moved the box.
