Operator is knowledgeable, responsive, and professional. Facilities are clean, spacious, well-organized, with good lighting and adequate stock. Abundant refrigeration for storage, all functioning properly. Staff appear to work well together and are efficient and well-trained.
There were no deficiencies noted at inspection. Operator is reminded that the new state regulation requiring ServSafe mgr or equivalent will go into effect this year. Please make arrangements to have more staff take the required training so that when the kitchen is operating, you will always have someone present who has the required certificate.
It is noted that this facility does not do any pre-cooking and cooling, with even raw produce having already been chilled before being cut. No need for a cooling record.
HACCP record review: HACCP plan (will check with Matthew and verify there is a signature page someone for each facility). Also reviewed: cooler logs, freezer logs, receiving, cook log, theromometer calibration log. All records are properly maintained in real time, and reviewed by the HACCP trained employee.
A full school facility inspection was also conducted at this time. School facility inspection results:
* It was noted that the boys and girls bathrooms have problems with the handsinks, where push-hand style faucets do not provide flow for long enough to wash hands. Re-pressing the button will re-soil the child's hands, preventing proper handwashing. Reset the faucets to provide 20 seconds of continuous water flow from each side (hot and cold) and each faucet, or replace the push-handles with standard faucet handles.
*one urinal was found to be non-operational and will need to be repaired.

* Facility is clean, well-maintained, and organized. Documentation is thorough for using time as a control for breakfast and lunch and for the temperature logs on the cold holding units.
  • Nonfood Contact Surfaces (repeated violation)
    Observation: The nonfood contact surface of the dry storage room shelving is not designed or constructed to be easily cleanable. Wooden shelves have paint badly peeling off in multiple areas.
    Correction: Alter or replace this item to provide a surface that is smooth, easily cleanable and nonabsorbant.

*Manager is watching the cold pass thru units to verify they are holding temperature. They were just repaired.
*Clean and organized facility. Great job!
*School sanitation inspection was done on the same visit. A copy of the inspection report was sent to the principle and is on file at the health department.

    Observation: The nonfood contact surface of the dry storage sheliving is not designed or constructed to be easily cleanable. Paint is peeling off wooden shelving.
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Suggest replacing with stainless wire shelving.

  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 165ºF for a stationary rack single temperature machine. The thermometer read 126.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
