| Discussed with the Person in Charge: 1. Dish machine took several cycles to reach proper sanitizing temperatures. Gauges, especially wash water temperature and pressure, do not appear to be working properly at this time. 2. Person in Charge is the only kitchen employee. If he is not available for work, the school orders lunch from a nearby restaurant. 3. Foods are generally prepared in this kitchen Mondays, Tuesdays and Thursdays. School orders from permitted facilities on Wednesdays and Fridays. 4. Facility overall appears clean and in good repair. Thank you!

| Discussed the following with the Person in Charge (PIC): 1. PIC prepares food in the facility 3 days per week. The other days, the school orders food from permitted restaurants. 2. Observed frozen bags of beef stew in the freezer. PIC discussed adequate cooling methods used to cool the stew. 3. PIC is the only employee who routinely works in the kitchen. When he is ill or unavailable to work in the establishment, facility orders food from permitted facility nearby. 4. Kitchen is very clean and well maintained. Thank you!
