1. Employee health policy, Form 1B is used as training verification. EHSS provided Employee Hygeine Handbook.
2. Food supplier is Reinart.
3. Discussed handwashing procedures and frequency. Discussed the importance of ensuring hands are being washed after handling raw meats before handling ready-to-eat foods.

No violation noted during this evaluation.

    Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food. EHSS provided PIC with FDA form 1B.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use. Observed wiping cloths stored in quat sanitizer <100ppm.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

Food supplier is US Foods. Burgers are always cooked well done. All burgers are cooked upon order, no hot holding. Discussed cleaning/sanitizing food contact surfaces & in use utensils. Overall very clean facility.

Observed good cooking and holding temperatures of foods and the overall facility very clean.
  • Critical: Hands - When to Wash*
    Observation: A food employee failed to wash his hands in between changing his gloves. He handled the raw hamburgers with his gloved hands, removed his gloves, placed new gloves on and then handled ready to eat foods.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Correction: Recommend hands be washed when handling raw foods and then using gloves to handle ready to eat foods, wash hands to prevent contamination. Repeat Violation.
