Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: Steramine sanitizing solution used was not at an acceptable concentration. Observed at a concentration less than 100ppm.
Correction: Adjust the sanitizing solution to 200-400 parts per million or otherwise identified by manufacturer's recommendations. PIC corrected to 300ppm.

Observation: Observed the small cutting board heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Recommend resurfacing or discarding and replacing the cutting board to provide a food contact surface that is smooth, easily cleaned and sanitized.
- Non-Food Contact Surfaces (repeated violation)
Observation: Observed the following nonfood contact surfaces with accumulations of grime and debris and in need of cleaning: outside surfaces of the trash can, floor around trash can, inside surfaces of the reach in cooler and door gaskets on the chest freezer.
Correction: Recommend cleaning the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: Observed milk cold holding at improper temperatures. Milk observed cold holding at 44.5 F. PIC was unaware how long milk had been cold holding above 41 F.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Recommend adjusting thermostat on the reach in cooler down.
