    Observation: Improper cooling methods - food observed covered, labeled and stored in a plastic container while 154°F in the center and 98°F at the corner.
    Correction: Instruct staff to cool hot foods by 1. stirring the food in an ice water bath 2. dividing the food into smaller, thinner portions 3. use containers that facilitate heat transfer or other effective methods.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: Wares cleaned at the three vat sink are not being sanitized - in item was dipped in the sanitizer and immediately removed.
    Correction: Instruct all staff to allow items sanitized at the three vat sink to have a minimum 60 second contact time with the sanitizer.

No out of compliance risk factors observed during this inspection. Employee food stored above student food in the walk in cooler - store employee food below and away from customer food. Quaternary ammonium test strips expired - please replace.
Note: employees stated that they are having issues with the right well on the far serving table - repair this unit as needed.
