Observation: Floors in the kitchen noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

The facility is being well kept and operators are maintaining appropriate documentation. Employees were observed demonstrating appropriate food safety practices through proper hand washing, proper food handling, and proper cooking procedures during the time of the inspection.

Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
