The noted observation and corrective action were discussed with the person in charge. Also discussed were regulations regarding storing items 6 inches above the floor. Overall, the facility is in compliance and employees were demonstrating appropriate food safety practices during the time of the inspection.

Observation: Floors in the kitchen noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Observation: Roast beef, deli turkey, and sliced tomatoes are cold holding at improper temperatures.
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
- Equipment - Good Repair and Proper Adjustment
Observation: The 2-door reach-in cooler was observed in a state of disrepair and damaged.
Correction: Repair the 2-door reach-in cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the 2-door reach-in cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: The nonfood contact surfaces of the condenser compartment attached to the back line prep unit have accumulations of dust, dirt, food residue, and/or debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: The prep sink basin in the kitchen is slow to drain (floor drain).
Correction: Plumbing systems and components shall be maintained in good repair.

Overall, employees were observed demonstrating appropriate food safety practices. Employees and operators were reminded that cleaning major kitchen equipment parts should be done while employees are not preparing and/or serving food. All observations listed above have been addressed and corrected.

Observation: Cheese, tomatoes, and other potentially hazardous food items for which time rather than temperature is being used as a control was not labeled properly or otherwise marked properly with a 4 hour cook, serve, or discard by time (items were stamped for pm rather than am).
Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.
