The above observations and the following were discussed with the person in charge:
-Ensure the consumer advisory will be provided on the new menu.
Abbreviations: PIC: Person in Charge, WIC: Walk in Cooler, RIC: Reach in Cooler, RIF: Reach in Freezer, ST: Surface Temperature, IT: Internal Temperature, PT: Prep Table, WIF: Walk in Freezer, HH: Hot Holding, CH: Cold Holding, MB: Milk Box, PC: Prep Cooler
  • Non-Food Contact Surfaces (repeated violation)
    Observation: The nonfood contact surfaces of the following equipment have accumulations of grime and debris: 1. the racks of the hot holding cabinet 2. the exterior of the fryers 3. the areas around the grill grates and the flat top grill 4. the area under the pizza racks 5. the shelf under the grills.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Plumbing System Maintained in Good Repair (corrected on site)
    Observation: Plumbing connections under the hand sink in the back of the kitchen are leaking. The PIC had the sink repaired during the inspection.
    Correction: Plumbing systems and components shall be maintained in good repair.

Inspection conducted as an opening inspection for the snack bar.
The above observations and the following were discussed with the person in charge:
-Consumer advisory observed on the menu board.
-Quaternary ammonium test strips provided for the bleach sanitizer used in the 3 compartment sink. Replace with the bleach test strips.
Facility is approved for the 2014 season.
  • Non-Food Contact Surfaces (corrected on site)
    Observation: The nonfood contact surface of the following equipment have accumulations of grime and debris: 1. the area around the grill 2. the ice machine. PIC cleaned both areas during the inspection.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The floors throughout the kitchen noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

The above observations and the following were discussed with the person in charge:
-Please replace the consumer advisory on the menu board. The existing consumer advisory has become worn and can no longer be read.
-Ensure floors throughout the kitchen are cleaned prior to opening.
-Ensure the following areas are cleaned prior to opening: the hood vents, the fryers, the pretzel holder and the area under the pizza racks.
-Food Sources approved.
-Bleach used as a sanitizer in the 3 compartment sink, test strips provided.
-Employee health policy observed.
Recommend employees attend a food safety class. Information provided.
Facility approved and permitted for the 2013 season.
