Observation: The nonfood contact surface of the interior of the deep fryer cabinets have accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: The coving around the walk in cooler is not maintained in good repair. The coving in this area is missing.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Observation: The floors in the kitchen under the equipment was noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Observation: The interior surfaces of the ice machine which was in contact with a non-potentially hazardous food item (ice) was observed soiled with accumulations of grime and debris.
Correction: Clean the interior surface of the ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

Observation: The following nonfood contact surfaces are not corrosion resistant, nonabsorbent, and/or smooth: The unsealed wooden stand under the microwave oven, 2-the tape surrounding the mop sink.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

The above observations and the following were discussed with the person in charge: -Ensure the thermometer used to measure the internal temperature of foods is easily accessible at all times. -Employee health policy observed. -Ensure individual packages of deli meat are being labeled with the date when separated from the original container. -All in use utensils are being washed, rinsed and sanitized or changed out after use or at least once every hour. -Work order in place to replace the caulking along the back of the 3 compartment sink. No food prep was observed during this inspection. The PIC was very cooperative and knowledgeable regarding food safety, thanks! Observation: There was no temperature measuring device located in the homestyle reach in refrigerator in the bar.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: 1. the knives in the knife block 2. the utensils stored over the prep table 3. the muffin pan on the storage rack. PIC took all items to the warewashing area to be cleaned during the inspection.
Correction: Clean and sanitize these surfaces for food contact.
