    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a Bleach test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Reviewed menu. Reviewed food handler cards and discussed employee health policy. CFM has good knowledge of food safety. Discussed glove use for use with all ready to eat foods. Foods are not cooled - no leftovers reheated for the next day. Plans for building of new kitchen scheduled for 2015. Mailed "new facility" packet on 2/13/15.
  • Lighting, Intensity
    Observation: Less than 50 foot candles of light was noted in the main kitchen and over the prep areas. No lighting in area above where cereal is stored/ dispensed.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
  • Physical Facilities in Good Repair
    Observation: The following is not maintained in good repair: wall under 3 compartment sink, wall under dishmachine, underneath shelving throughout kitchen, and under hand sink.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

It was noted during this inspection that the current batch of shelled raw eggs are not pasteurized. As a reminder, unpasteurized eggs cannot be offered undercooked to the residents of this facility. Other observations: Need to clean the kitchen window sills, obtain a digital metal stem probe thermometer, restore the water supply to the mop sink, and dump the used mop water into the mop sink for disposal.
  • Handwashing Cleanser; Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

Good employee food safety practices demonstrated during this inspection.

Reviewed the following with the kitchen manager: employee health status, cooling methods, calibrating the thermometer and replacing the existing thermometer with a digital probe thermometer, no bare hand contact on ready-to-eat foods, proper method for dispensing ice from the ice machine, and the current status of employee food handler cards. A clean and well-organized kitchen. Good employee food safety practices demonstrated during this inspection.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: When activated, the mop sink's hot and cold water mixing valves do not produce a flow of water through the faucet.
    Correction: Repair the hot and cold water mixing valves so that water is available for the mop sink.
