    Observation: The ready-to-eat (RTE) commercially processed deli meats in the refrigeration unit were not properly dated for disposition after opening. The PIC dated the deli meats during the inspection.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: The Quaternary Ammonium sanitizer that is being applied to food contact surfaces does not meet the requirements. The sanitizer tablets used in the 3 compartment sink measured at >400 ppm. The PIC corrected the sanitizer to 200 ppm during the inspection.
    Correction: Utilize only sanitizer that meets the requirements when applying to food contact surfaces.

  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium sanitizing test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Ceiling tiles throughout the kitchen are not smooth and easily cleanable.
    Correction: Repair or replace ceiling to make it smooth and easily cleanable.
  • Hand Drying Provision
    Observation: No disposable towels were provided at the hand washing station in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
