    Correction: After washing individually wrap or protect apples (sneeze guard or domed cover) or provide signage recommending guests wash the apples before eating.

    Observation: Cased cream cheese (43-44*) and butter chips (53*) in the refrigerator are cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous/time-temperature control for safety (phf/tcs) foods at or below 41*. Recommend removing cream cheese from box and storing in vented baskets. Relocate butter chips from the door since that is the warmest part of the unit.

This inspection was a risk factor inspection that focused on the 5 risk factors for foodborne illness (food from unapproved sources, inadequate cooking temperatures, inadequate holding temperatures, improper employee health and hygiene, and cross contamination of food and equipment). Good retail practices (GRPs) observed were discussed with operator and/or staff at time of evaluation. Refer to evaluation conducted on 6/4/2014 for repeat good retail practices out of compliance such as lack of chlorine test strips, non-washable ceiling tiles in the kitchen, unwrapped stir sticks, and lack of trash can at the immediate area of the hand sink. Continental breakfast ends at 9:00 am. PIC breaking down bar at time of visit. Observed phf/tcs foods under time as a public health control discarded.

    Correction: Hand sinks shall be accessible at all times of operation.

Food delivered today prior to EHS arrival and awaiting for stocking--sausage frozen. yogurt surface temp 48*--was put away during evaluation. Discussed methods and cold holding capacity.
  • Food Display (repeated violation)
    Observation: Apples and uncovered pitchers of juice are stored unprotected on the continental breakfast bar.
    Correction: Use approved methods to protect food from consumer contamination such as covered pitchers or sneezeguards for the picthers and the apples. In lieu of individually wrapping WASHED apples or a sneezeguard/covered container operator may post a placard advising guests to wash apples before consuming.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: The following potentially hazardous foods are cold holding at improper temperatures: 1) butter chips (49-50*) and sausage (47-49*) in the refrigerator
    Correction: 2) cream cheese at continental breakfast spill over table 74*

    Observation: Bare wood covering storage pallet.
    Correction: Paint to seal the bare wood or replace with approved material that is smooth, easily cleanable, and non-absorbent.

    Correction: food contents internal temperature measured at 47-50*.

    Observation: The person in charge stated she did not have a food thermometer to measure food temperatures.
    Correction: Provide at least one tip-sensitive (or digital) food thermometer.

    Correction: apples are to be individually wrapped ( plastic wrap ) or be under a domed cover or sneeze guard ( same with pears / plums or any fruit that the peel is typically eaten )
