  • Critical: Hands - When to Wash* (corrected on site)
    Observation: A food employee failed to wash her hands before engaging in food preparation after scratching her nose and handling the refrigerator door. EHS discussed this with the employee.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Critical: Temperature, Cooking - Raw Animal Foods* (corrected on site)
    Observation: The chicken pieces were not cooked to a sufficient temperature and time to eliminate pathogenic bacteria. Chicken measured 90'F and 94'F. Chicken was placed in a pan and cooked to 180'F.
    Correction: Continue to cook the meat to heat all parts to 145°F or above for 15 seconds.

    Observation: Observed raw hamburger stored over ready-to-eat (RTE) food in the home style reach in freezer.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: The hand sink is not sealed to adjoining walls.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

    Observation: The following physical structures are not maintained in good repair: light in the reach in refrigerator and lights in the restroom
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

    Observation: Observed raw hamburger stored over fries in the home-style reach in freezer. Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: Observed that the pizza cutter that were in a state of repair and condition preventing effective maintenance and easy cleaning.
    Correction: Discard, replace or repair the blade to provide proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the storage drawers in the kitchen have accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

  • Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent (repeated violation)
    Observation: The nonfood contact surface of the wood shelf is not corrosion resistant, nonabsorbent, and/or smooth.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
  • Insect Control Devices - Design and Installation (corrected on site)
    Observation: Insect control device is located over bananas where dead insects may be impelled or fall. Device was removed.
    Correction: Install the insect control device away from a food preparation area so that dead insects and insect fragments are prevented from being impelled onto or falling on exposed food, clean equipment, utensils, and linens, and unwrapped single service and single use articles. Exposed food and food-contact surfaces must be protected from contamination by insects or insect parts. Installation of the device over food preparation areas or in close proximity to exposed food and/or food contact surfaces could allow dead insects and/or insect parts to be impelled by the electric charge, fall, or be blown from the device onto food or food-contact surfaces.
