    Observation: Observed employee use cell phone with gloves and then fail to change gloves before engaging in food prep/cooking.
    Correction: Make sure gloves are changed after handling contaminated items..

    Observation: Observed food on the line over 41 degrees.
    Correction: Don't fill containers with as much food. Also try and keep the tomatoes covered as much as possible because of the heat lights above them
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: Observed several dishes, the tomato slicer, and the slicer soiled.
    Correction: Make sure dishes and equipment are cleaned thoroughly before putting them away. Also make sure to fully remove the date mark labels. Have someone go through and check the dishes and rewash any soiled dishes.

    Observation: Observed the hood filters in need of cleaning.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Observed a leak under the handsink by the office and by the walk-in. Also observed a leak in the faucet of the mop sink.
    Correction: Have the leaks repaired.

    Correction: Make sure the pasta is covered completely and not over filled, so that the food can stay below 41 degrees.

    Observation: Observed several clean dishes still soiled and soda guns at the bar in need of cleaning.
    Correction: Make sure dishes are cleaned thoroughly and that date labels are completely removed. Make sure the soda guns are soaked and scrubbed daily to prevent mold build-up.

    Correction: Make sure that date mark labels and residue are being cleaned off of clean dishes completely. Also make sure the slicers are cleaned completely after each use.

    Observation: No lids in the women's restroom for trash receptacles.
    Correction: Provide lids for trash receptacles in the restroom.

    Observation: Accumulation of dust on several air vents in kitchen.
    Correction: Clean air vents to remove accumulation of dust.

    Observation: Observed vent hood filters in need of cleaning. 1 filter is missing on the back side of the vent hood.
    Correction: Have filters cleaned and replace the missing filter.

Heating element in dish machine caught on fire on 12/7/14, power was turned off to the machine and fire extinguisher was used. Area was cleaned and sanitized, 3 compartment sink is being used until it is replaced. Ok to open for service.

    Correction: Corrected by pulling to be rewashed.
