Note: * Observed foods still cold-holding slightly elevated. Operator has scheduled a work person to adjust the thermostat in the walk-in refrigerator. * The mechanical dish-machine was sanitizing @ 50 to 100 ppm chlorine in the final rinse. Operator had chlorine test-strips for checking concentration. No violation noted during this evaluation.

Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Observed foods in the walk-in refrigerator cold-holding at 45 degrees F. Recommend to adjust unit to hold ambient air temperatures of 37 degrees F ensuring food tempertures of 41 degrees F or below.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (repeated violation) Observation: Observed the mechanical dish-machine showing less than 10 ppm chlorine in the final rinse cycle. Machine had heavy lyme build-up and the sprayer arms were blocked.
DE-LYME THE MACHINE IN ORDER TO INCREASE EFFICIENCY.
Correction: OPERATOR WILL CALL SERVICE PERSON TO ADJUST THE AMOUNT OF CHLORINE FEEDING INTO THE MACHINE. Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F.
Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* Observation: Observed heavy mineral build-up on inside of ice-machine. Discussed with operator the need to break ic-machine down, remove parts and clean, sanitize interior of bin.
Correction: Clean and sanitize these surfaces for food contact.
