    Observation: Observed raw hamburger patty not sufficiently cooked to min. 155 degree F temperature. The hamburger patty came out of the grill initially @ 149 to 154 degrees F.
    Correction: THE OPERATOR RE-SET THE GRILL FOR A FEW SECONDS LONGER FOR THE SETTING OF THE BUTTON. A recheck on the burgers showed that product was reaching 156 to 159 degrees F. Violation corrected at time of evaluation.
    Continue to cook the meat to heat all parts to 155°F or above for 15 seconds.

Note: OBSERVED GOOD FOOD AND UNIT TEMPERATURES. OPERATOR HAD UP-TO-DATE FOOD TEMPERATURE LOGS. EMPLOYEES HAD CLEAN UNIFORMS/APRONS AND HAD HAIR RESTRAINED. GLOVES WERE USED WITH R.T.E. FOODS=
GOOD JOB! HAND-WASHING STATIONS WERE SET-UP CORRECTLY WITH 100 PPM CHLORINE IN THE THIRD BASIN. THE SANITIZING SOLUTIONS WERE SET-UP CORRECTLY WITH 100 PPM CHLORINE.
