Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Floor and Wall Junctures, Coved, and Enclosed or Sealed
Observation: Floor wall juncture next to the freezer is not coved and closed to no larger than 1/32 inch space.
Correction: Cove floor wall juncture to no larger than a 1/32 inch space.
- Physical Facilities in Good Repair
Observation: Ceiling tile and floor tiles are not maintained in good repair.
Wall in walk-in refrigerator is not maintained in good repair.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
- Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
Observation: The following noted in need of cleaning:
-Floors under and behind equipment throughout the facility
-Walls throughout the facility
-Ceiling throughout the facility
EHS opened up drop ceiling and used a ladder to observe inside for presence of rodents. Minimal rodent droppings were observed on the interior of the drop ceiling. Rodent droppings were not present INSIDE THE KITCHEN area. Rodent droppings isolated to the interior of the roof/attic drop ceiling area only - NOTE: This area is not normally visited during normal routine inspections.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner. Note: Owner is working with licensed pest control operator to abate potential issue. Facility is contracted with a licensed pest control operator regularly.
