    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: ice machine and soda ice chute.
    Correction: Clean and sanitize these surfaces for food contact.

  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration in dish - empty machine
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F. Train staff to check levelas with chlorine test strip each shift.
  • Handwashing Signage/Handwashing Facilities
    Observation: The sign that notifies food employees to wash their hands is missing in both toilet rooms..
    Correction: Provide a sign/poster that is clearly visible to all employees

  • Utensils - In-Use - Between-Use Storage (corrected on site)
    Observation: Ice scoop left in ice machine.
    Correction: Store in-use ice scoop in designated holder to prevent scoop from being buried by ice.
  • Equipment and Utensils, Air-Drying Required
    Observation: Baking sheets/pan were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
