    Observation: Observed an employee eating chips (several) while preparing them. Also, 4 drink cups without lids and straws were observed on the wire shelf directly above the chip prep table.
    Correction: Manager immediately talked to the crew about eating as well as proper tasting. Drinks were removed from the area.

    Observation: Observed the pans that had been washed wet stacked.
    Correction: Pans should air dry.

    Correction: PIC reheated the sofritas to >165°F.

    Observation: Chicken undercooked at 136°F when removed from grill and placed in pan for chopping station.
    Correction: Employee returned chicken to grill to finish cooking. Employee used food thermometer to verify cooking temp of at least 165°F when removed from grill.
