The operator provided a metal probe thermometer and chlorine test strips during today's inspection. Limited food service operation is conducted for the before and after child care service ( the operator stated snacks are provided for the children) and limited food service/processing for the child care operation, at the site.

  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket to the Hobart reach-in cooler is in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Critical: Equipment and Utensils - Before Use After Cleaning*
    Observation: The Hobart chemical dishmachine tested at 0 ppm chlorine. The operator was informed to wash rinse and sanitize at the warewashing 3 compartment sink, until the chemical dishmachine is serviced/repaired.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Cracked ceiling material/surfaces were observed by the food processing 2 compartment sink.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Pests - Removing Dead or Trapped Birds - Insects, Rodents, and other Pests
    Observation: Dead or trapped roaches/insects were found in the control device, in the warewashing area.
    Correction: Remove dead or trapped birds, insects, rodents, and other pests from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.

The operator provided a probe thermometer and chlorine test strips at this time. Pan Da Vida Ministerio International as of 11/3/14 provides meals for the Children's Home of Virginia Baptist childcare program and Before and After-school program.

    Observation: A leak was observed at the side of the chemical lines into the dishmachine, upon filling of the dishwasher.
    Correction: Repair the chemical dishmachine to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the chemical dishmachine, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Cracked and peeling ceiling material is observed by the kitchen side exit door.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Exposed ceiling plaster and ceiling material was observed in the kitchen area. The operator stated that repairs to the ceiling are pending at this time.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: The Hobart reach-in cooler and Delfield reach-in freezer were observed with elevated ambient air temperature readings of 50 degrees F and above.(the operator called for service and repair during today's inspection)
    Correction: Repair the Hobart reach-in cooler and Delfield reach-in freezer to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the Hobart reach-in cooler and Delfield reach-in freezer, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Physical Facilities in Good Repair
    Observation: Exposed plaster and bubbling of the ceiling paint material was observed at various locations in the food processing area.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

The facility currently offers cold lunch service, thru the USDA program-Kid's Cafe, during the summer. The kitchen proposed use is to offer cooking and nutritional classes to students and their parents.
