Observation: Food stored on the floor or food stored less than 6" above the floor in the walkin freezer.;Elevate food storage onto approved shelving with minimum 6" legs or casters.
- Critical: Food - Potentially Hazardous Food - Cold Holding*
Observation: Cut tomatoes were at improper cold temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
- Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: inside the ice machine.
Correction: Clean and sanitize these surfaces for ice contact.
- Non-Food Contact Surfaces
Observation: The nonfood contact surface of the wall behind the coke syrup, floor grates and the lid to the sugar recepticle .
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects.
- Mops - Drying Mops (corrected on site)
Observation: Wet mops drip onto the floor.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
- Critical: Pests-Controlling Pests*
Observation: Too many flies in the kitchen area.
Correction: Eliminate all flies . Correct all housekeeping deficiencies.

Manager was aware of the of the incident and counseled the employee on the spot not to ever do that again. He advised the complainant.Tried to call and notify the complainant. Note- Cutting board in rear food prep area observed discolored, worn and with deep stained cut marks. Said cutting boards must be replaced or resurfaced. Facility in good condition.

Observation: Sliced grilled chicken cold holding at improper temperatures in that registered at 56 degrees F in low boy refrigerator in rear salad prep station. As per the operator said food was taken from walk in refrigerator and placed in said unit 30 minutes prior to testing.
Correction: Operator voluntarily relocated said food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

Observation: The cutting board in rare food prep area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Observation: Racks of buns stored next to brooms/cleaning utensils.
Correction: Prevednt possible contamination by relocating food or cleaning items
- Handwashing Lavatory, Water Temperature, and Flow
Observation: Water from the handwashing sink at front line (77F) was measured at a temperature less than 100°F.
Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens. Please check all handsinks including toilet rooms to be sure 100F.
- Plumbing System Maintained in Good Repair
Observation: The handsink (rear salad prep are) is overflowing at drain/slow to drain.
Correction: Plumbing systems and components shall be maintained in good repair.
