  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site) (repeated violation)
    Observation: The following utensils were observed soiled to sight and touch: tongs. The tongs were taken to the 3-compartment sink to be cleaned.
    Correction: Clean and sanitize these surfaces for food contact.
  • Non-Food Contact Surfaces
    Observation: The following nonfood contact surface have an accumulation of grime and debris: the bottom of the ice cream cooler, the drip tray of the slushie machine, and the top of pizza oven.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections at the three-compartment sink are leaking. The faucet was observed leaking and the tap was observed loose.
    Correction: Plumbing systems and components shall be maintained in good repair.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: The floor throughout the kitchen area is not smooth and easily cleanable. The floor throughout the kitchen area needs to be resealed.
    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: The wall around the mop sink and the shelf behind the three-compartment sink are in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Pests - Controlling Pests*
    Observation: Harborage conditions exist. The area directly under the soda machine has an accumulation of syrup creating an harborage area for fruit flies. Observed several fruit flies near this area.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

Site visit was made by request to discuss the addition of another cooking area in the catering/party room area.
The area has already been equipped with a three compartment sink, a reach-in cooler, a pizza oven, a hand sink, and a mop sink. The idea is to assemble the pizzas in the already existing kitchen and transport them to this area on a covered rolling rack.
After inspecting the area, I explained that I would have to talk to the EH Supervisor and verify what steps would be need to use this area.

Inspection conducted due to complaint dated 21 Nov 2013. Examined the ice machine. No evidence of mold in the machine. Person in charge stated that the machine is completely cleaned out every month. Examined the slushy machine and found no evidence of mold. Machine is broken down and thoroughly cleaned once per week. Examined the ice cream display case and found no evidence of mold. The soda machine nozzles are washed, rinsed and sanitized every night according to the person in charge. The nozzles were being put back on the machine during the inspection. There was no evidence of mold or any other substance on the nozzles

    Observation: The food-contact surfaces of the following equipment were not observed sanitized: the quatenary ammonium being used in the three compartment sink measured at 10 ppm. PIC corrected to 150ppm.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Kitchenware and Tableware (corrected on site) (repeated violation)
    Observation: Observed single-service or single-use knives displayed,so that the food- or lip-contact surfaces were not protected from contamination. Box of plastic knives were inverted.
    Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination.

    Observation: In general the floors, walls and ceiling are noted in need of cleaning.
