The above observations and the following were discussed with the person in charge:
-Employee health policy.
-Clean the area behind the grease trap.
-Replace the QT-10 test strips used to monitor the concentration of the quaternary ammonium sanitizer.
The facility was observed to be very clean and well maintained, great job by all staff members!

    Observation: Food packages are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants (ex: dented food cans). Dented cans observed on the dry storage rack. The PIC removed the dented cans during the inspection to be returned to the supplier.
    Correction: Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants.

Quaternary ammonium sanitizer in the 3 compartment sink measured 200 ppm. Facility is clean and well maintained.

    Observation: Food from damaged packaging offered for sale or service. Observed a dented can of carrots and a dented can of applesauce on the dry storage shelving.
    Correction: Discard or return food products once the packaging is damaged or is in bad condition. Food packages must be in good condition to protect the integrity of the contents so that food is not exposed to adulteration or potential contaminants.

  • Equipment - Cutting Surfaces
    Observation: The cutting board is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. PIC voluntarily disposed of the cutting board.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Kitchenware and Tableware
    Observation: Cleaned and sanitized utensils not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination. Utensils must be retrieved by their handle so as to avoid contamination.
    Correction: Handle, display, or dispense cleaned and sanitized utensils so the food- or lip-contact surface are protected from contamination.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the handwashing sink beside the 3 compartment sink was measured at a temperature less than 100°F. Water temperature was 85'F. PIC will have maintenance try to adjust temperature.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
