Correction: Discontinue use of wood or wood wicker for this purpose. All food contact surfaces must be smooth, durable, and nonabsorbent, to prevent deterioration and to maintain an easily cleanable surface. Wood, if used, shall be hard maple or an equivalently hard, close-grained wood.

Observation: There has been replacement of the water heater. The current water heater (LIST Make, Model, KW/ BTU input, Recovery Rate 100°F Rise of the equipment) has been calculated and the peak hot water demand for the establishment cannot be met.
Correction: An upgrade of this water heater is required to provide a minimum (GPH) recovery rate at 100°F rise within 30 days. Prior to purchase or installation of the water heater, contact me at 518-2646 to provide all information (i.e. make, model, input, and recovery rate) or fax a copy of the unit specifications to my attention at the Health Department for final approval.

Observation: Toilet room door is not provided with a self-closing door
Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.

Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Gap beneath door to outside.
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
- Ventilation - Mechanical Ventilation
