Observation: Observed Frigidaire chest freezers with tops in a state of disrepair. Insulation is exposed on one freezer.
Correction: Repair the freezers to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the freezers, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
- Non-Food Contact Surfaces
Observation: The nonfood contact surface of the ice machine has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Abbreviations: PIC-person in charge, RIR-reach-in refrigerator, RIF-reach-in freezer The snack bar was not open during the inspection due to storm damage at the facility the prior evening. There was no damage to the snack bar kitchen. The hamburgers are the only item on the menu that are received raw and cooked to order. All other items are received precooked and reheated to order.

Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

Observation: Single-service or single-use articles not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination. The PIC inverted all of the single service articles.
