Main supplier is BJs, Restaurant Depot, RRS. Hamburgers are raw ground beef, cooked from frozen. Chicken and BBQ are pre-cooked products.Employee health information is posted. Thermometer and test strips available. PIC knows cooking temperature for ground beef. Foods cooked/reheated for immediate service. No foods cooled and reheated for next day service. Nacho cheese is held over in cheese warmer.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Observed Frigidaire chest freezers with tops in a state of disrepair. Insulation is exposed on one freezer.
    Correction: Repair the freezers to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the freezers, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the ice machine has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

The snack bar was not open during the inspection due to storm damage at the facility the prior evening. There was no damage to the snack bar kitchen.
The hamburgers are the only item on the menu that are received raw and cooked to order. All other items are received precooked and reheated to order.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
  • Kitchenware and Tableware (corrected on site)
    Observation: Single-service or single-use articles not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination. The PIC inverted all of the single service articles.
    Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination.

    Correction: Recommend all employees become aware of Employee Health policy/procedures. Distributed form 1-B to PIC.

    Observation: Observed test strips not available for testing of chlorine levels for utensil sanitizing.
    Correction: Recommend test strips be acquired to measure and insure sanitizer levels are between 50 ppm and 200 ppm chlorine CORRECTED..

    Observation: Observed flies present in establishment.
    Correction: Recommend controls be in place to reduce presence of insects which cause contamination.
