Supplier is US Foods for most foods. Employee health information discussed and posted. PIC indicated information had recently been reviewed with new staff. No raw proteins prepared. No foods held over for next day service. Foods reheated for immediate service (within 10 minutes of reheating). Precooked meats reheated from frozen state. Vegetables and most fruit are canned. Lettuce and carrots are bagged. Discussed reheating temperatures. No raw shell eggs use or served. All juices commercial products. Test strips and thermometer available. Equipment is pre-washed prior to putting into dishmachine.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

Observed the refrigeration unit operating at a temperature of 38°F. The foods inside of the unit were between 41°F-42°F. Recommend slightly lowering the thermostat to ensure that the foods remain at 41°F or below at all times.
No violation noted during this evaluation.		11/25/2014Follow-up
The menu today consisted of pizza, salad, and fruit. The pizza is cooked and served (no hot holding).
No eggs are served at this facility and all meat products are purchased fully cooked.
Observed the overall facility clean and well maintained.
A follow-up inspection will be conducted on Nov. 25, 2014 to ensure that the reach-in cooler is holding foods at or below 41°F.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: The following foods cold holding at improper temperatures in the 2 door reach-in cooler: milk-44°F, reconstituted grape juice-44°F, American cheese-45°F. The PIC contacted a technician to service the unit
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

24 pupils current enrollment. Dishmachine wash 155, rinse 160, test strip ~160 degrees. Recommend thermometer be available in reach-in cooler. Recommend hand sink water temperature be adjusted to 100 degrees or above. Utensils, glasses, and plates are first wash/rinsed/sanitized (chlorine) in 3 basin sink set-up before cleaning items in Dishmachine. Recommend Dishmachine be serviced to insure 180 degrees is attained in sanitizing cycle.

Observed hand sink water temperature in kitchen at 98 degrees. Recommend temperature be adjusted to maintain a minimum of 100 degrees. 40 pupils in day care, after school 40 pupils. Reheat pre-cooked foods. Food reheating at time of inspection: green peas and apples. Dishes/utensils/pots cleaned in 3 basin sink then wash/rinsed in Hobart dish machine.
