100 PPM chlorine in 3 vat sink. Students have been heating water for dishwashing.
  • Critical: Hands and Arms - Clean condition*
    Observation: Food employees observed with soiled hands and arms. Hands not being properly washed due to no hot water available at handsink.
    Correction: Inform all food employees to keep their hands and exposed portions of their arms clean. Water temperature for handsinks mush be 100 degrees F or higher to ensure proper handwashing. -- Water heater broken since 1sth of May. Maintenance told teacher last parts came today. Should be fixed by close of school today.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the handwashing sinks was measured at a temperature less than 100°F. No hot water.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens. -- See note about water heater above.
  • Critical: Pests-Controlling Pests* (repeated violation)
