    Observation: Several dead roaches (seven) observed on glue traps in kitchen (under the handwashing sink in dishwashing area, behind the steamer and under the food prep table next to the delivery door).
    Correction: Remove dead or trapped birds, insects, rodents, and other pests from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.

    Observation: Mice droppings (six) noted under shelves in dry food storage room and employee break room.
    Correction: Eliminate pest or evidence of pest. Eliminate harborage conditions in the establishment.

    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens. Provide soap in said facility.

    Observation: The handwash station at the dishwashing area is being used for purposes other than washing hands in that said sink was observed with cleaning supplies (scrubs, brush and cleaner) placed in it.
    Correction: The handwash facility identified above is to be used for washing hands only. Operator voluntarily removed all cleaning supplies from said sink.

All food temperatures were within the acceptable range. The dish machine was sanitizing with a utensil temperature of 171 degrees F. Employees were observed washing hands and changing gloves between tasks.

Provide hand washing signage at all hand sinks. All food temperatures were within the acceptable range. The dish machine was sanitizing utensils with a temperature of 175 degrees. The quat sanitizer at the 3 basin sink was good @ 200 ppm. Manager provided information on the reportable illnesses.

  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: The left air curtain of the walk-in freezer door was observed in a state of disrepair and damaged.
    Correction: Repair the air curtain to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the air curtain, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
