Due to the age of the building, the facility does not comply with current code requirements. In the event of a change in operator or remodeling, the facility must be brought up to the current code requirements. This may include the addition of one or more handsinks, improved lighting, repair of structural deficiencies, and repair or replacement of damaged equipment, and proper installation of laundry facilities. Note: Ensure outside dumpster stays closed when not in use. Also have the inside bottom checked for holes/rust damage, it was observed that liquid waste seems to be leaking from the bottom of the dumpster.

    Observation: Pasta bake ( meat sauce and noodles) hot holding at improper temperatures. Product was measured at 130*F-131*F
    Correction: Food was rapidly reheated to 165°F or above for hot holding.

    Observation: The following equipment is not sealed to adjoining equipment or walls:
    1. Sink located in the employee rest-room was not sealed to the wall.
    2. Mop sink was not sealed to the wall.

    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

    Observation: The following nonfood contact surface of the has accumulations of grime and debris:
    1. Door gaskets moldy on reach-in coolers.
    2. Hood ventilation system over top of the oven observed with an accumulation of dust.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Refuse - Covering Receptacles (repeated violation)
    Observation: Dumpster outside was open.
    Correction: Keep dumpster lid closed when not in continuous use.
  • Handwashing Signage/Handwashing Facilities (corrected on site)
    Observation: A sign or poster that notifies food employees to wash their hands was not provided in the employee rest-room.
    Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.

    Observation: The following physical structures was not maintained in good repair:
    1. Walk-in cooler tiles were cracked and wall/ceiling was not sealed.
    2. Floor under the steamer is deteriorating.
    3. Walk-in cooler tiles were cracked, wall /ceiling not sealed.
    4. Walls and ceiling were not sealed in the area located at the rest-room entrance.
