This facility is the only cooking kitchen at present. Food is taken from here and sent to Bon Air Expansion and is also served on-site. Suggest checking out/replacing the right Delfield RIC if it is ever supposed to be used on a regular basis for TCS items. Planning to remove the the front set of food prep sinks to allow for more preparation surfaces. The unit receives heavy in/out traffic during meal periods, and all product must be kept under 41 F at all times.
