Viewed oyster tags which are kept for at least 90 days. Spoke with manager concerning food and dishwasher temp charts. Manager to monitor drain at bar. Facility recommended for permit. Food permit, copy of application and receipt issued to manager.

    Observation: Metal rack stored with sasonings in front of panel boxes.
    Correction: Remove metal rack from blocking panel boxes.

    Observation: Observed a hose attached to mop sink faucet fixture. The hose extended below the flood rim level of the sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

    Correction: Repair or replace the door gaskets in accordance with the manufacturer's specifications.

    Observation: A sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees.

    Observation: Freezer box and step in freezer door gaskets in disrepair.
    Correction: Repair or replace the freezer box and step in freezer door gaskets in accordance with the manufacturer's specifications.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of grime and debris on the following food contact surfaces: white refrigerator(server area) need defrosting, can opener, catch tray under stove.
    Correction: Clean and sanitize these surfaces for food contact.
